Sourdough pancakes this year’s big trend as recipe surges in popularity

Shrove Tuesday is a day many look forward to each year so they can treat themselves to some pancakes.

However, it seems like people aren't just sticking to the traditional British recipe this Pancake Day.

According to experts, sourdough pancakes are this year's big trend, due to a 1,037% rise in popularity during lockdown.

Cassie Best, from BBC Good Food, said: "With the increased popularity of sourdough baking in the past year, it's no surprise that sourdough pancakes are this year's big pancake trend.'

She recommended adding some sourdough starter (a fermented mixture of flour and water which gives sourdough bread its lift) to pancake batter, which gives it a tangy taste. The ingredient also aids digestion.

Sourdough pancakes can be served with sweet and salty toppings, and are a good way to get rid of leftover starter you might have built throughout the year, according to Oli Martin, head chef at Hipping Hall and winner of Masterchef The Professionals.

He told The Telegraph: "I imagine people have got to a point where they have baked enough bread and want to be more adventurous and pancakes could be the next thing.

"That's how we landed up making sourdough waffles and crumpets."

Sourdough pancakes recipe

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 cup sourdough starter
  • 1 1/2 cups milk
  • 1 large egg beaten
  • 2 tablespoons vegetable oil

Method

1. Whisk together the flour, baking powder and soda, sugar and salt in a large bowl

2. Add the sourdough starter, milk, egg and oil and mix well just until combined

3. Spray a pancake griddle with cooking spray or grease well with butter. Heat to about 300-350 degrees

4. Pour 1/4 cup pancake batter on the hot griddle. Cook until the pancake starts bubbling on top, then flip the pancake

5. Cook for an another 1-2 minutes or until the pancake is cooked through

6. Serve with toppings of your choice

Brad Carter, a chef at Michelin-starred restaurant Carters of Moseley in Birmingham, also said that sourdough pancakes are great served with a soft cheese like brie.

Meanwhile amateur bakers have been busy showing off their sourdough pancake recipes and serving suggestions online.

Some have gone for savoury eggs and sweet jam, while another topped theirs with scrambled eggs and cherry tomatoes sprinkled with chives.

Sweet creations include yoghurt, blueberries, kiwi and mango and another topped them with strawberries and cream.
